I think I tried to smoke a goose about 15 years ago, and it was when I got from a local butcher who admitted he didn’t sell many of them. It was not good. But I didn’t know what I was doing.

7-8 years back I accidentally smoked a goose on the way to the dump one morning. Never saw him. Picked what was left of him out of the grill of my truck

The only thing I know about cooking goose is they will dump a load of fat. Good to use a tray to collect it and reuse

Imo the best part of the goose is the fat. I wouldn’t smoke it. Roast it and collect the fat, use the fat later for fried potatoes, eggs, anything. So good.
On another note I hate how expensive they are.

Never smoked goose. But it seems it smoke like a turkey would. But it does have a higher fat than chicken, so you can cook it at a lower temp to get more smoke flavor into the meat.

Smoke at about 225-250. Smoke it with apple or cheery wood. Place the goose on a cedar plank. When the dark meat reaches 160…toss away the goose and eat the cedar plank.
Did a whole duck recently. Dry brine for 24 hours stuffed it with some oranges and finished it in the oven broil high

I smoked a goose last Christmas. Was really good. Spatchcocked it and smoked it pretty hot. Covered the breast with some foil so it didn’t overcook like 2/3rds of the way in.
I used to smoke the breast when I shot them and make dog treats out of them

I wanted to try to cook a goose for a while, but I don’t know anyone with experience cooking it and, with the price, am afraid to make a costly mistake.

And I thought it was bad when I paid $60 a few years ago for one. I didn’t smoke it though so I can’t answer your actual question, but when I roasted it, I was surprised that it didn’t have as much meat on it as I thought it would. The fat was the best thing I ever cooked with though. I still dream about the leftover goose omelette I made a couple days later.

Goose is dark meat and cooked like beef to medium rare. I like it, a lot of people don’t. I stuff the cavity of wild geese with apples and oranges and bake until breast is 135° and the skin is crispy. The fat is good and will leak all over if you’re not careful.
But I sure as hell wouldn’t spend that money on a goose.

I only eat them when I’m given them for free, smoked the breasts and sliced them super thin so the toughness isn’t such an issue. Starvation food

Besides Maverick, I’ve never heard of anyone trying. I’ve always found birds to get a bit unpleasant as they seem to enjoy high temps to get that skin and fat doing their thing. Post pics if you do one please.
